Homemade Lasagna

Ingredients:
1 lb grass-fed ground beef
1 small yellow onion
3-4 cloves of garlic, minced
1 32oz jar of sauce, I love Rao’s Tomato Basil
2 carrots either shredded or diced finely
1 large handful of kale chopped finely
2 bags of Trader Joe’s almond or cashew milk cheese
1 cup fresh basil
1 cup diced baby Bella mushrooms
1 box Jovial gluten-free noodles

I like to make the sauce first and usually have some leftovers that I either like to freeze or keep in the fridge to add to noodles for Zane.
Mince ground beef and then drain the excess fat. Add the diced onions and minced garlic. Cook until the onions are nice and glossy.
Add the carrots & mushrooms.
Next, add the sauce and mix well. Let the sauce simmer for a good 10 minutes.
Preheat your oven at 350
Spray your baking dish with some avocado oil.
No need to cook the noodles, they will cook perfectly in the oven.
Let’s start layering!
1st add a little bit of sauce to the bottom of the baking dish, next add a layer of noodles, then add more sauce, next a layer of fresh basil, next a layer of cheese and repeat as many times as your dish allows! Top it off if some extra cheese and then bake for about 30/35 minutes. Add some fresh cheese and basil on top. I hope you try and enjoy this recipe! It’s seriously so good!!!
