Loaded Barbacoa Nachos
OMG YUM! These were so good! I used left over barbacoa, with @sietefoods dip chips & broken taco shells, topped it off with tons of fresh veggies! Purple cabbage, pickled red onions, roasted corn, diced orange and red bell peppers, cilantro, avocado, sunburst tomatoes, radishes & organic sprouts. I made a easy sour cream alternative with @kitehillfoods plain almond milk yogurt and mixed in some spices. Simple, nutritious and delicious!
