Three ingredients, real fruit, no refined sugar. The summer treat that takes 5 minutes of work and tastes like a vacation.
This is my summer staple. My kids see the popsicle molds come out of the freezer and lose their minds. The best part is they're just blended fruit and full-fat coconut milk, no refined sugar, no dyes, no weird stabilizers.
I do them in layers: blueberry on the bottom, coconut in the middle, pineapple on top. They look gorgeous and each bite is a different flavor. If you're short on time, just blend everything together and pour, they're still delicious.
Use full-fat coconut milk in a glass jar or can lined with BPA-free liner. The fat is what makes them creamy instead of icy. I get mine from Thrive Market, Native Forest is my favorite.
If you want the layers to look really clean, give each one a full 45 minutes in the freezer before adding the next. If you don't care (I usually don't), just pour them gently with the back of a spoon and the layers will mostly hold. Either way, they taste the same.
